Aardappelen Margo
About us

More than thirty years of potatoes

Aardappelen Margo is a family business in Aalbeke supplying fresh chips and peeled potatoes to the professional kitchen.

We have been active in the potato trade since 1992. Over those years we built up a solid feel for the product: which varieties suit chips, how to judge a batch, and what it takes to store potatoes well.

That knowledge led to a new step in 2005, when we began peeling and cutting ourselves. What started as an extension has since become the core of the business.

Today we are a regular supplier to chip shops, restaurants, catering kitchens, caterers and events. Our customers know what they get and when it arrives.

Own fields and partner growers

Some of our potatoes grow on our own land. For the rest we work with fellow farmers who have grown for us for years. They work to the same approach, which gives us a supply we can count on.

Short lines across the whole chain

Because we grow, process and deliver, the product passes back through our hands at every stage. If something goes wrong in the field, we know about it long before the potato reaches the peeler. That short line is why we can make good on freshness.

Food safety

Our business is registered with the FAVV, the Belgian Federal Agency for the Safety of the Food Chain. The cold chain stays unbroken, from our cold store to yours.

A year on the farm

  • Potato field with straight ridges under a blue sky, a tractor in the distance
A plot just after planting, ridges running true.
  • Tractor and planter forming potato ridges on a freshly worked field
In spring we form the ridges the potatoes grow in.
  • Garden fork in the ridge with a small heap of just-dug potatoes in front of it, in a field of green haulm
A test dig tells us whether the haulm can come off yet.
  • Red potato harvester at work on a lifted plot
The harvester lifts the potatoes out of the ridge and separates the soil.
  • Freshly lifted potatoes in a trailer, with a green field and a harvester in the background
The crop goes straight from the field into the trailer.
  • Trailer full of potatoes during the harvest, with the harvester behind
On a good lifting day the trailers run back and forth.
  • Lorry tipping its load of potatoes inside the shed
At the shed the load comes off and the batch goes into storage.
